Dark Nights, Cold Days !!!! While dreaming of the sunshine and the Spring why not imagine us here at 'Simply Healing...... We have the logs burning and all is cosy for our guests. This evening's Soup is Tomato and Roasted Red Pepper to keep them warm and hunger free. Roasted Red Pepper & Tomato Soup Small Punnet of Large Tomatoes 2 Red Peppers (roasted in their skins) 1 Large Onion Vegetable Stock 1 Tin of Chopped Organic tomatoes ΒΌ a cup of Mediterranean Herbs Roast Red Peppers in the oven until soft. Simmer Onion & Vegetable Stock plus the tinned Tomatoes. Place peppers in with the Tomato mix and blend. Add Herbs, leave to stand for 5 minutes so that the Herbs can infuse & serve. A delicious soup to share with someone special - that never ceases to impress your loved one or your guests.
