'Simply Healing' Warming Winter Soup DAIRY FREE WATERCRESS SOUP (Full of Iron & Magnesium to keep away the dreaded ailments). 3 medium size onions chopped 8 large potatoes diced 4 litres vegetable stock (I use bouillon organic vegetable powder but use whatever vegetable stock you like but check the contents.) 6 bags of watercress 2 cloves of garlic Add stock powder to hot water. Put on hob to simmer & add diced potatoes. In a small frying pan sweat the onions in a small amount of the vegetable stock until soft, then add to the onions together with the crushed cloves of garlic. Simmer until the potatoes are softened. Add the watercress and stir for about 3 mins until the leaves are all wilted. Remove from the heat and liquidise (may need liquidising more than once). Sit back & enjoy with the family !!!
